The conditions were perfect for sapping today. We had 30 people, collected 2500 gallons from 1500 buckets that were all mostly full. We did not get to our 4th site and will complete that tomorrow morning to prepare for Monday’s sap run. Sugar content remains high at 3.2 to 4.0. Most of our trees are located in residential areas and have large crowns on them. The RO worked flawlessly turning what used to take at least a17 hour cooking time to 5 hours.
